  • 2 cups green beans (trimmed, fresh or thawed frozen)
  • 1 cup diced onion (yellow or white)
  • 1 cup sliced button or baby bella mushrooms
  • 3 tsp minced garlic (fresh)
  • ¼ cup low-sodium beef or chicken broth
  • ⅓ cup full-fat sour cream
  • 2 Tbsp cream cheese (room temperature)
  • ½ tsp sea salt (or to taste)
  • ½ tsp freshly ground black pepper
  • ½ tsp Worcestershire sauce
  • ⅛ tsp dried thyme
  • 2 cups shredded Colby Jack cheese (use 1 cup for a lighter version)

Instructions

  1. Brown the beef by heating a large cast-iron skillet over medium heat and cooking for about 5 minutes until browned.
  2. Drain most of the fat, leaving about 1 tablespoon in the pan, and set the beef aside.
  3. Sauté the diced onion in the skillet for about 3 to 4 minutes until translucent.
  4. Add the sliced mushrooms and cook for about 2 minutes until caramelized.
  5. Stir in the fresh green beans, minced garlic, and broth, cooking for another 2 to 3 minutes.
  6. Create the creamy base by lowering the heat to medium-low and mixing in cream cheese and sour cream until melted and smooth.
  7. Combine the browned beef with the creamy mixture and season with salt, pepper, Worcestershire sauce, and thyme.
  8. Sprinkle shredded Colby Jack cheese over the top of the casserole mixture.
  9. Melt the cheese by placing the skillet under the broiler for 1 to 2 minutes or cover and let it cook on low for 3 to 4 minutes until melted.

Notes

For a leaner option, use ground turkey. For a dairy-free version, substitute cream cheese and sour cream with dairy-free alternatives.
