- 2 cups mixed bell peppers, sliced
- 1 cup broccoli florets
- 2 tablespoons vegetable oil
- 3 cloves garlic, minced
- 1 tablespoon ginger, minced
- 2 tablespoons soy sauce
- 1 tablespoon black pepper
- Salt to taste
- Cooked rice for serving
Instructions
- Heat the vegetable oil in a large pan over medium-high heat. Add the sliced chicken and cook until golden brown, about 5–7 minutes, stirring occasionally.
- Add the minced garlic and ginger, stir-frying for about 1 minute until fragrant. Toss in the mixed bell peppers and broccoli, stir-frying for 3–4 minutes until vibrant and tender.
- Drizzle in the soy sauce, black pepper, and a pinch of salt, stirring everything together. Cook for another 2 minutes to meld the flavors. Serve hot over cooked rice.
Notes
Feel free to prep your veggies and chicken ahead of time to make cooking quicker. Adjust the spices to taste and add more vegetables for variety.
