Delicious Crispy Broccoli Tots, perfect for busy weeknights or as a fun snack for the kids.

- 2 medium broccoli heads (approximately 550g / 19.5 oz)
- 2 eggs
- ¾ cup (60g) almond flour
- ¾ packed cup (75g) sharp cheddar cheese
- 2 garlic cloves, minced
- ½ tsp salt (optional)
Instructions
- Preheat the oven to 375℉ (190℃) and line a baking sheet with parchment paper.
- Cut the florets off the broccoli heads and break them into medium-sized pieces. Remove the tough outer skin of the stems and slice them into 1-2 cm (½-¾ inch) pieces.
- Steam or boil the stem pieces for about 1 minute, then add the florets and steam for another 3-4 minutes until tender. Drain well and chop the cooked broccoli finely.
- In a large mixing bowl, combine the chopped broccoli, shredded cheddar cheese, eggs, almond flour, and minced garlic. Mix until well combined.
- Using a heaped tablespoonful of the mixture, form it into a tot shape and place it on the prepared baking tray. Repeat with the remaining mixture, about 23 to 25 tots.
- If desired, spray the tots lightly with oil for a crispier finish. Bake for 20 minutes or until golden brown and cooked through.
Notes
Don’t overcook the broccoli for great flavor and color. If unsure if the mixture will hold, bake a small test batch first.
