Delicious homemade cookies reminiscent of classic pop tarts, featuring a sweet cinnamon filling with a crunchy exterior.

- 2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/2 cup brown sugar, packed
- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 teaspoon cinnamon
- 1/4 teaspoon salt
- 1/4 cup milk (plus more for the icing)
- 1 cup powdered sugar (for icing)
- 1–2 tablespoons milk (for icing)
Instructions
- Preheat your oven to 375°F (190°C) and cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Mix in the egg and vanilla extract until well combined.
- In another bowl, whisk together the flour, cinnamon, and salt. Gradually mix into the wet ingredients, adding milk as needed to form a soft dough.
- Roll out the dough to about 1/4 inch thick and cut into rectangles.
- Place a tablespoon of filling in the center of half the rectangles, place another rectangle on top, and seal the edges using a fork.
- Bake on a parchment-lined baking sheet for 15-20 minutes or until golden brown.
- Allow to cool slightly, then ice with a mixture of powdered sugar and milk.
Notes
For added flavor, consider including mini chocolate chips or dried fruits in the filling.
