Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/2 cup brown sugar, packed
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1/4 teaspoon salt
  • 1/4 cup milk (plus more for the icing)
  • 1 cup powdered sugar (for icing)
  • 12 tablespoons milk (for icing)

Instructions

  1. Preheat your oven to 375°F (190°C) and cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  2. Mix in the egg and vanilla extract until well combined.
  3. In another bowl, whisk together the flour, cinnamon, and salt. Gradually mix into the wet ingredients, adding milk as needed to form a soft dough.
  4. Roll out the dough to about 1/4 inch thick and cut into rectangles.
  5. Place a tablespoon of filling in the center of half the rectangles, place another rectangle on top, and seal the edges using a fork.
  6. Bake on a parchment-lined baking sheet for 15-20 minutes or until golden brown.
  7. Allow to cool slightly, then ice with a mixture of powdered sugar and milk.

Notes

For added flavor, consider including mini chocolate chips or dried fruits in the filling.
