Ingredients

  • 2 tablespoons basil pesto
  • 5 cloves garlic (minced)

  • 1 cup sour cream
  • 1/2 cup fresh chopped basil
  • 8 ounces low-moisture mozzarella cheese (cut into chunks)
  • 8 ounces shredded provolone cheese
  • 1/4 cup freshly grated parmesan cheese
  • Crusty bread, crackers, or tortilla chips for serving

Instructions

  1. Preheat your oven to 400°F (200°C) and toss 1 cup of cherry tomatoes with olive oil, basil pesto, minced garlic, kosher salt, and black pepper in a baking dish. Roast for about 15 minutes.
  2. While the tomatoes are roasting, mix together the sour cream and fresh basil in a bowl, then add the mozzarella, provolone, and parmesan cheese.
  3. Combine the cheesy mixture with the roasted tomatoes, and top with halved remaining cherry tomatoes. Bake for an additional 20 minutes until the cheese is melted and bubbly.
