- 1.5 pounds lean ground beef
- 1 red bell pepper, seeded and chopped
- 1 yellow onion, chopped
- 1 ounce taco seasoning mix
- 2 ½ cups biscuit mix (like Bisquick)
- 1 cup water
- Cooking spray
- ½ cup sour cream
- ½ cup mayonnaise
- 4 ounces diced green chiles, drained
- 1 ½ cups Cheddar cheese or Fiesta blend, shredded (divided)
- 1 teaspoon garlic powder
- ½ cup mild salsa
Instructions
- Preheat your oven to 350℉. In a large skillet over medium-high heat, add the ground beef and break it apart with a wooden spoon. Cook until the meat is no longer pink, then drain off excess fat.
- Combine the biscuit mix and water in a medium mixing bowl, mixing until just combined. Spray your casserole dish with cooking spray and press the dough into the dish. Bake for 5-8 minutes until set and lightly golden.
- Add the chopped onions and red bell pepper to the skillet with the cooked ground beef, stirring and cooking for about 4 minutes until softened. Sprinkle in the taco seasoning and mix.
- Spread the ground beef mixture over the biscuit layer. In another bowl, mix sour cream, mayonnaise, green chiles, ¾ cup shredded cheese, and garlic powder. Gently spread over the beef.
- Top with spoonfuls of mild salsa and the remaining shredded cheese. Bake uncovered for about 30 minutes until hot and bubbly.
