Description

A delightful dessert featuring strawberries hollowed out and filled with a rich, creamy cheesecake-like filling.


Ingredients

  • 1824 large strawberries
  • 1 cup heavy whipping cream
  • 1 (8 ounce) package of cream cheese, softened
  • 1/3 cup sour cream
  • 2/3 cup white granulated sugar
  • 1 tsp vanilla extract
  • 1 tbsp fresh lemon juice (optional)
  • 1/2 cup graham cracker crumbs

Instructions

  1. Gently wash and dry the strawberries, then slice them in half lengthwise and trim the back to sit upright.
  2. Use a melon baller or spoon to hollow out a small cavity in each strawberry half.
  3. In a bowl, beat heavy whipping cream until stiff peaks form, about 5 minutes.
  4. Combine softened cream cheese, sour cream, sugar, vanilla extract, and lemon juice (if using) in another bowl, mixing until smooth.
  5. Fold the whipped cream into the cream cheese mixture gently.
  6. Fill a piping bag with the cream cheese mixture and pipe it into each strawberry half, then sprinkle with graham cracker crumbs.
  7. Serve immediately or chill for 30 minutes before serving.

Notes

Choose ripe strawberries for the best flavor and texture, and don’t overbeat the whipping cream.
