A delightful dessert featuring strawberries hollowed out and filled with a rich, creamy cheesecake-like filling.

- 18–24 large strawberries
- 1 cup heavy whipping cream
- 1 (8 ounce) package of cream cheese, softened
- 1/3 cup sour cream
- 2/3 cup white granulated sugar
- 1 tsp vanilla extract
- 1 tbsp fresh lemon juice (optional)
- 1/2 cup graham cracker crumbs
Instructions
- Gently wash and dry the strawberries, then slice them in half lengthwise and trim the back to sit upright.
- Use a melon baller or spoon to hollow out a small cavity in each strawberry half.
- In a bowl, beat heavy whipping cream until stiff peaks form, about 5 minutes.
- Combine softened cream cheese, sour cream, sugar, vanilla extract, and lemon juice (if using) in another bowl, mixing until smooth.
- Fold the whipped cream into the cream cheese mixture gently.
- Fill a piping bag with the cream cheese mixture and pipe it into each strawberry half, then sprinkle with graham cracker crumbs.
- Serve immediately or chill for 30 minutes before serving.
Notes
Choose ripe strawberries for the best flavor and texture, and don’t overbeat the whipping cream.
