Ingredients
1 lb ground beef
1 onion, chopped
2 cloves garlic, minced
4 cups potatoes, diced
4 cups beef broth
2 cups shredded cheddar cheese
1 cup milk
Salt and pepper to taste
2 tablespoons olive oil

2. Add diced potatoes and beef broth. Bring to a boil, then reduce heat and simmer until potatoes are tender, 15-20 minutes.
3. Stir in milk and cheddar cheese. Cook until cheese is melted and soup is creamy, about 5 minutes.
4. Season with salt and pepper to taste.
5. Serve hot, garnished with extra cheese or chives if desired.
Notes
Storage: Let soup cool before storing to keep it fresh.
Substitutions: Try mozzarella or Monterey Jack instead of cheddar.
Prep: Pre-chop onions and garlic for quicker cooking.
Serving: Add a dollop of sour cream for extra creaminess.
Variation: Add carrots, peas, or corn for more nutrition, or swap beef with turkey or chicken.
