- 2 cups frozen tater tots
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1/2 cup sour cream
- 1/4 cup Taco Bell chipotle sauce (adjust to taste)
- 6 large flour tortillas
- Salt and pepper to taste
- Optional toppings: Diced tomatoes, chopped green onions, cilantro
Instructions
- Preheat your oven and follow the package instructions to cook the frozen tater tots until golden and crispy.
- In a skillet over medium heat, add the ground beef (or chosen substitute) and season with salt and pepper. Cook until browned, about 7-10 minutes, then drain excess grease.
- In a large mixing bowl, combine the cooked ground beef and crispy tater tots. Stir in the shredded cheddar and Monterey Jack cheeses until well mixed.
- Warm the tortillas in a skillet or microwave for 10-15 seconds. Spoon the filling into each tortilla, drizzle with chipotle sauce, and add sour cream. Fold the sides over the filling and roll tightly.
- Place the burritos seam-side down in a baking dish. Sprinkle additional cheese on top and bake in a preheated oven for 5-7 minutes until cheese is melted.
- Garnish with optional toppings and serve hot with extra sour cream and chipotle sauce on the side.
