Ingredients
1 sheet frozen puff pastry, thawed
1 lb ground beef
1 cup shredded mixed cheese (Provolone, Cheddar)
1/2 cup finely chopped onion
2 cloves garlic, minced
2 tbsp beef broth
1 tbsp apple cider vinegar
1 tsp dried oregano
1 tsp dried thyme
1/2 tsp smoked paprika
1 tbsp olive oil
Salt and pepper to taste
1 egg, beaten (for egg wash)
3 tbsp parchment paper-lined baking sheets
Instructions
Preheat oven to 400°F (200°C)
Thaw puff pastry according to package instructions
Marinate beef with beef broth, apple cider vinegar, salt, pepper, and oregano/thyme for 30 minutes
Heat olive oil in a skillet, cook beef mixture over medium-high heat until browned
Add onions and garlic, sauté until caramelized (7-10 minutes)
Stir in shredded cheese until fully melted, then cool slightly
Roll puff pastry into a 16×20 in rectangle (2 layers if using 2 sheets)
Spread beef mixture down the center, leaving 2 in borders
Carefully roll the pastry into a tight log, using a little water to seal edges
Cut into 12 even pinwheels using a sharp knife
Place on baking sheets, brush with egg wash, and sprinkle with paprika
Bake 12–15 minutes until golden and crisp
Notes
Let the beef-cheddar mixture cool for 10 minutes before assembling to prevent pastry shrinking
For extra crispiness, use a rimmed baking sheet and cook onion at medium heat
Pinwheels can be frozen uncooked for up to 2 weeks before baking
