Ingredients

- 2 cups cooked chicken, shredded
- 1 package (9 oz) cheese tortellini
- 6 cups chicken broth
- 1 cup carrots, diced
- 1 cup celery, diced
- 1 onion, chopped
- 3 cloves garlic, minced
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
- 2 cups spinach
- Parmesan cheese for serving
Instructions
- In a large pot, sauté the onion, carrots, celery, and garlic over medium heat until softened.
- Add the chicken broth, oregano, thyme, salt, and pepper. Bring to a boil.
- Stir in the tortellini and cooked chicken. Cook for about 5-7 minutes until the tortellini are tender.
- Add spinach and cook until wilted.
- Serve hot, topped with Parmesan cheese.
Notes
For extra flavor, add a splash of lemon juice before serving. You can customize the soup by adding other vegetables or making it creamy with heavy cream.
