Description

A warm and comforting chicken soup with cheesy tortellini and fresh vegetables.


Ingredients

  • 2 cups cooked chicken, shredded
  • 1 package (9 oz) cheese tortellini
  • 6 cups chicken broth
  • 1 cup carrots, diced
  • 1 cup celery, diced
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 2 cups spinach
  • Parmesan cheese for serving

Instructions

  1. In a large pot, sauté the onion, carrots, celery, and garlic over medium heat until softened.
  2. Add the chicken broth, oregano, thyme, salt, and pepper. Bring to a boil.
  3. Stir in the tortellini and cooked chicken. Cook for about 5-7 minutes until the tortellini are tender.
  4. Add spinach and cook until wilted.
  5. Serve hot, topped with Parmesan cheese.

Notes

For extra flavor, add a splash of lemon juice before serving. You can customize the soup by adding other vegetables or making it creamy with heavy cream.
