Ingredients

  • 1/2 cup basmati rice (rinsed and soaked for 30 minutes)
  • 4 cups whole milk (or any milk of your choice)
  • 1/2 cup sugar (adjust to taste)
  • 1/4 teaspoon cardamom powder
  • 1 tablespoon ghee or unsalted butter
  • 1/4 cup mixed nuts (almonds, cashews, and pistachios)
  • A pinch of saffron strands (optional)
  • 1/2 teaspoon vanilla extract (optional)

Instructions

  1. Prepare the rice by rinsing it under cold water until clear, then soak for 30 minutes and set aside.
  2. Cook the milk in a large pot over medium heat until it simmers, stirring frequently.
  3. Combine the soaked rice with the milk, stirring well, and cook on low heat for about 20–25 minutes.
  4. Add sugar, cardamom, and saffron (if using), stirring until dissolved.
  5. Finish by mixing in ghee and vanilla extract, adjusting sweetness as desired.

Notes

For a dairy-free version, substitute whole milk with almond or coconut milk. For a healthier option, use honey or agave syrup instead of sugar.
