Ingredients

- 1/2 cup basmati rice (rinsed and soaked for 30 minutes)
- 4 cups whole milk (or any milk of your choice)
- 1/2 cup sugar (adjust to taste)
- 1/4 teaspoon cardamom powder
- 1 tablespoon ghee or unsalted butter
- 1/4 cup mixed nuts (almonds, cashews, and pistachios)
- A pinch of saffron strands (optional)
- 1/2 teaspoon vanilla extract (optional)
Instructions
- Prepare the rice by rinsing it under cold water until clear, then soak for 30 minutes and set aside.
- Cook the milk in a large pot over medium heat until it simmers, stirring frequently.
- Combine the soaked rice with the milk, stirring well, and cook on low heat for about 20–25 minutes.
- Add sugar, cardamom, and saffron (if using), stirring until dissolved.
- Finish by mixing in ghee and vanilla extract, adjusting sweetness as desired.
Notes
For a dairy-free version, substitute whole milk with almond or coconut milk. For a healthier option, use honey or agave syrup instead of sugar.
