Ingredients
1 cup melted unsalted butter
1 1/2 cups granulated sugar
2 large eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 cup strong brewed coffee or coffee substitute (non-alcoholic)
1/2 teaspoon baking powder
1/4 teaspoon salt
1/2 cup semi-sweet chocolate chips
Instructions
Preheat oven to 350°F (175°C) and line a 9×13-inch baking pan with parchment paper.
In a large bowl, whisk together the melted butter and sugar until well combined.
Add eggs one at a time, mixing well after each addition.
Stir in vanilla extract.
In a separate bowl, sift together flour, cocoa powder, baking powder, and salt.
Gradually mix the dry ingredients into the wet ingredients.
Stir in brewed coffee or coffee substitute until the batter is smooth.
Fold in chocolate chips.
Pour the batter into the prepared pan and spread it evenly.
Bake for 30-35 minutes, or until a toothpick inserted into the center comes out with a few moist crumbs.
Cool completely before cutting into squares.
Notes
For a richer coffee flavor, use a higher quality or darker roast coffee.
Store in an airtight container at room temperature for up to 5 days or in the refrigerator for up to a week.
For a vegan version, substitute butter with coconut oil, eggs with a flax egg (1 flaxseed + 3 tbsp water), and use vegan chocolate chips.
