- 1 egg
- 1/4 cup vegetable or canola oil
- 1 tsp. vanilla extract
- 3/4 cup granulated sugar
- 1/2 cup milk
- 1/4 tsp. salt
- 2 tsp. baking powder
- 1 1/2 cups all-purpose flour
- 2 tbsp. melted butter
- 1/2 cup brown sugar
- 2 tsp. ground cinnamon
- 2 tbsp. additional flour (for streusel)
- 1/2 cup chopped walnuts (optional)
- 1 tbsp. room temperature butter
- 3/4 cup powdered sugar
- 1 tbsp. milk (extra, if needed)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9-inch round or square cake pan.
- In a mixing bowl, beat together the egg, vegetable oil, vanilla extract, and sugar until well combined. Gradually add the milk.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add this to the wet ingredients, stirring until just combined.
- For the streusel topping, combine melted butter, brown sugar, cinnamon, and the remaining flour in a small bowl until crumbly. Fold in walnuts if using.
- Pour half of the batter into the prepared pan, sprinkle half of the streusel on top, then add the remaining batter and finish with the rest of the streusel.
- Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean. Let cool before transferring to a wire rack.
