- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) corn, drained
- 1 can (10 oz) diced tomatoes with green chilies
- 1 package (8 oz) cream cheese, cubed
- 2 cups shredded cheddar cheese
- 1 tsp chili powder
- 1 tsp cumin
- Salt and pepper to taste
- Tortilla chips for serving
Instructions
- Brown the ground beef in a large skillet over medium heat for 5-7 minutes, breaking it up as it cooks. Drain excess fat.
- Add the black beans, corn, diced tomatoes, and cream cheese to the skillet. Stir and simmer for 3-5 minutes until cream cheese melts.
- Stir in the cheddar cheese, chili powder, and cumin; continue to cook until heated through, about 3-5 minutes. Season with salt and pepper to taste.
Notes
For a leaner option, substitute ground beef with chicken or turkey. Keep the dip warm in a slow cooker for serving.
