  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) corn, drained
  • 1 can (10 oz) diced tomatoes with green chilies
  • 1 package (8 oz) cream cheese, cubed
  • 2 cups shredded cheddar cheese
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Tortilla chips for serving

Instructions

  1. Brown the ground beef in a large skillet over medium heat for 5-7 minutes, breaking it up as it cooks. Drain excess fat.
  2. Add the black beans, corn, diced tomatoes, and cream cheese to the skillet. Stir and simmer for 3-5 minutes until cream cheese melts.
  3. Stir in the cheddar cheese, chili powder, and cumin; continue to cook until heated through, about 3-5 minutes. Season with salt and pepper to taste.

Notes

For a leaner option, substitute ground beef with chicken or turkey. Keep the dip warm in a slow cooker for serving.
