Description

A comforting soup filled with creamy potatoes, tender cabbage, and vibrant carrots, perfect for chilly evenings.

Ingredients

Scale
  • 1 onion, finely chopped
  • 1/2 cabbage, roughly chopped
  • 1/2 lb potatoes, washed and diced
  • 1 carrot, peeled and finely sliced
  • 4 to 5 cups chicken stock (or vegetable broth for a vegetarian option)
  • 1 bay leaf
  • Kosher salt and black pepper, to taste
  • Parsley, chopped, for garnish

Instructions

  1. In a large pot, heat a splash of olive oil over medium heat. Add the finely chopped onion and sauté for 3-4 minutes until softened.
  2. Add the sliced carrot and cook for an additional 2 minutes. Then introduce the diced potatoes and chopped cabbage. Season with salt and pepper and cook for another 3-4 minutes.
  3. Pour in the chicken stock and add the bay leaf. Bring to a gentle boil, then reduce heat and simmer for 15-20 minutes until the potatoes and cabbage are tender. Remove the bay leaf before serving and garnish with chopped parsley.

Notes

For a creamier texture, stir in a splash of cream at the end. You can also customize by adding other veggies or proteins.
