Ingredients

- 1 onion, finely chopped
- 1/2 cabbage, roughly chopped
- 1/2 lb potatoes, washed and diced
- 1 carrot, peeled and finely sliced
- 4 to 5 cups chicken stock (or vegetable broth for a vegetarian option)
- 1 bay leaf
- Kosher salt and black pepper, to taste
- Parsley, chopped, for garnish
Instructions
- In a large pot, heat a splash of olive oil over medium heat. Add the finely chopped onion and sauté for 3-4 minutes until softened.
- Add the sliced carrot and cook for an additional 2 minutes. Then introduce the diced potatoes and chopped cabbage. Season with salt and pepper and cook for another 3-4 minutes.
- Pour in the chicken stock and add the bay leaf. Bring to a gentle boil, then reduce heat and simmer for 15-20 minutes until the potatoes and cabbage are tender. Remove the bay leaf before serving and garnish with chopped parsley.
Notes
For a creamier texture, stir in a splash of cream at the end. You can also customize by adding other veggies or proteins.
