- 1 1/2 lbs Yukon Gold or red potatoes, scrubbed and diced
- 8 oz thick-cut beef bacon, turkey bacon, or chopped chicken strips
- 1 large yellow onion, thinly sliced
- 2 tablespoons butter (or olive oil for dairy-free)
- 2 tablespoons fresh parsley, chopped
- 1/2 teaspoon sea salt
- 1/4 teaspoon freshly cracked black pepper
- Optional: 1/2 teaspoon garlic powder or 1 clove garlic, minced
- Optional: 1/4 teaspoon smoked paprika
Instructions
- Prepare your ingredients by scrubbing and dicing the potatoes, slicing the onion, and chopping the bacon or chicken.
- Heat a skillet over medium heat, cook the bacon until crispy, about 6-8 minutes. Add the onions and sauté for 2-3 minutes.
- Stir in the diced potatoes, season and mix well. Cook undisturbed for 4-5 minutes to form a crust, then gently flip and cook for another 10-15 minutes until fork-tender and crispy.
- Optionally, broil for extra crunch and sprinkle with parsley before serving.
Notes
For a dairy-free version, substitute butter with olive oil. Store leftovers in an airtight container for up to 3-4 days.
