- 8 oz beef bacon (diced)
- 8 oz beef sausages (or chicken sausages if preferred)
- 1 large onion (sliced)
- 4 medium potatoes (peeled and sliced)
- 2 medium carrots (chopped)
- 4 cups low-sodium chicken broth
- 1/4 cup fresh parsley (chopped)
- Salt (to taste)
- Pepper (to taste)
Instructions
- In a large pot over medium heat, cook the diced beef bacon until crispy and golden brown, about 5-7 minutes. Add sliced onion and sauté for an additional 3-4 minutes until softened.
- Add chopped carrots and sausages to the pot. Cook until sausages are browned, about 5 minutes.
- Add sliced potatoes, pour in chicken broth, and season with salt and pepper. Cover and simmer on low heat for 30-40 minutes, until everything is tender. Stir in fresh parsley before serving.
Notes
Feel free to substitute vegetables based on availability. Leftovers improve in flavor and can be stored in the fridge for up to 4 days or frozen for 2 months.
