Parmesan Crusted Chicken Sheet Pan Dinner

Description

A cozy and delicious one-pan dinner featuring cheesy, crispy chicken served with roasted potatoes and vibrant green beans.


Ingredients

  • lb chicken breast (about 34 pieces, approximately 1 inch thick)
  • 2 T olive oil, divided
  • 2 cloves garlic, minced
  • c grated Parmesan cheese
  • c breadcrumbs (Italian or plain with an optional tsp of Italian seasoning)
  • ½ tsp cracked pepper
  • ½¾ tsp sea salt
  • 2 lb red potatoes, cut into bite-sized pieces
  • 12 cloves garlic, minced
  • 1 lb fresh green beans, ends trimmed
  • 1 T olive oil, for green beans
  • 1 T Parmesan cheese (optional), for green beans
  • Additional salt and pepper, to taste

Instructions

  1. Preheat your oven to 425°F (220°C) and line a sheet pan with parchment paper.
  2. Toss the cut potatoes with 1 tablespoon of olive oil, minced garlic, salt, pepper, and a sprinkle of Parmesan, then spread on one-third of the sheet pan and roast for 10–15 minutes.
  3. In the same bowl, mix together the chicken breasts, remaining olive oil, minced garlic, grated Parmesan, breadcrumbs, cracked pepper, and sea salt. After the potatoes have roasted, add the chicken to the pan.
  4. Toss the green beans with olive oil, minced garlic, and a pinch of salt and pepper, then add to the pan after the chicken has cooked for about 10 minutes.
  5. Return to the oven and bake for another 25 minutes, until the chicken reaches an internal temperature of 165°F (74°C).
  6. If desired, turn the oven to broil on high for an additional 4–5 minutes for crispier potatoes.
  7. Remove from the oven, let cool briefly, then serve and enjoy!

Notes

Consider prepped veggies and marinated chicken for easier weeknight cooking.
