  • 1 bell pepper, diced

Instructions

  1. Preheat your oven to 375°F (190°C). Boil diced potatoes in salted water for 5–7 minutes until just tender, then drain and set aside.
  2. In a skillet, cook the diced onion and bell pepper over medium heat until soft. Add cooked chicken strips, garlic powder, salt, and pepper; mix well. In a bowl, whisk eggs and milk, then fold in the sautéed mixture and diced potatoes.
  3. Grease a 9×13-inch baking dish, pour in the mixture, and top with shredded cheese. Bake for 30–35 minutes until set and golden brown.
