Instructions

  1. Prepare the Vegetables: Dice the onion, carrots, and celery. Mince the garlic; peel and cube the potato; have corn and diced tomatoes ready.
  2. Sauté Aromatics: In a pot, heat olive oil over medium heat and sauté onion, carrots, and celery for 8-10 minutes.
  3. Add Garlic and Spices: Stir in minced garlic, dried thyme, and oregano; cook for one minute.
