Instructions
- Prepare the Vegetables: Dice the onion, carrots, and celery. Mince the garlic; peel and cube the potato; have corn and diced tomatoes ready.
- Sauté Aromatics: In a pot, heat olive oil over medium heat and sauté onion, carrots, and celery for 8-10 minutes.
- Add Garlic and Spices: Stir in minced garlic, dried thyme, and oregano; cook for one minute.
- Combine Vegetables and Broth: Add potato, corn, and diced tomatoes. Pour in broth, season with salt and pepper; stir to combine.
- Simmer Soup: Bring to a boil, reduce heat, cover, and simmer for 20-25 minutes until potatoes are tender.
- Cook Noodles: Stir in cooked noodles; simmer for an additional 5-7 minutes.
- Add Cream: If desired, stir in heavy cream and heat for 2-3 minutes without boiling.
