Description
This quick and creamy chicken dish uses pantry staples like cream of mushroom soup and turns them into a comforting meal in just 30 minutes.
Ingredients
2 boneless skinless chicken breasts
1/2 teaspoon garlic powder
Salt and pepper to taste
1 tablespoon olive oil
2 tablespoons butter, divided
1/2 medium onion, chopped
1/3 cup chicken broth
1 (10.5 oz) can condensed cream of mushroom soup
Chopped fresh parsley (optional)
Instructions
1. Slice chicken breasts in half lengthwise to create 4 cutlets and season with salt, pepper, and garlic powder.
2. Heat olive oil and 1 tablespoon of butter in a skillet over medium-high. Add chicken and sear 4-5 minutes per side until golden.
3. Remove chicken and reduce heat to medium. Add remaining butter and chopped onion; sauté until golden.
4. Stir in chicken broth and condensed soup, mix until smooth.
5. Return chicken to the pan with juices. Simmer 5-6 minutes until chicken is fully cooked and sauce thickens.
6. Garnish with parsley and adjust seasoning as needed.
Notes
Use low-sodium broth and soup if you’re watching salt levels.
Great served over mashed potatoes, rice, or egg noodles.
