- 12 ounces linguine or fettuccine pasta
- 1 pound large shrimp, peeled and deveined
- 2 tablespoons olive oil, divided
- 2 tablespoons butter
- 4–5 garlic cloves, minced
- 2 tablespoons tomato paste
- 1 cup chicken broth
- 1 cup heavy cream
- 1/2 cup Parmesan cheese, freshly grated
- 2 tablespoons Cajun seasoning
- 1/4 cup fresh parsley, chopped
- Salt and black pepper to taste
Instructions
- Cook the pasta according to package directions until al dente, then reserve 1 cup of pasta cooking water before draining.
- Season the shrimp with Cajun seasoning, salt, and pepper. In a skillet, heat 1 tablespoon olive oil and cook shrimp for 1-2 minutes per side until pink and cooked through. Remove and set aside.
- In the same skillet, lower heat and add remaining olive oil and butter. Cook the minced garlic until fragrant.
- Stir in tomato paste and cook, then add chicken broth and simmer until reduced by one-third.
- Add heavy cream and half of the Parmesan cheese, stirring until the sauce thickens.
- Combine pasta with the sauce, adding back the shrimp and mixing well. Serve with remaining Parmesan and fresh parsley on top.
Notes
Feel free to adjust the Cajun seasoning to taste. For a vegetarian option, swap shrimp with sautéed vegetables.
