  • 2 tablespoons all-purpose flour
  • 1 1/2 cups whole milk
  • 1/2 cup chicken broth
  • 1/2 teaspoon garlic powder (for sauce)
  • 1/4 teaspoon dried thyme
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Season the chicken breasts with garlic powder, onion powder, smoked paprika, salt, and black pepper. Heat olive oil in a skillet over medium-high heat and sear the chicken for 4-5 minutes on each side until golden brown. Remove and let it rest.
  2. In a medium saucepan, bring chicken broth and a pinch of salt to a boil. Add rice, reduce heat, cover, and simmer for 15-18 minutes until tender. Fluff with a fork.
  3. In the same skillet, melt the butter over medium heat. Whisk in flour for 1-2 minutes. Gradually add whole milk and chicken broth, whisking until smooth. Stir in garlic powder, thyme, and cheeses. Cook for an additional 3-4 minutes until thickened.
  4. Serve the creamy sauce over the rice, garnishing with parsley.

Notes

For a healthier twist, use chicken thighs. Substitute whole milk with a non-dairy alternative if needed. Adjust cheese for lower-fat options.
