- 8 oz spaghetti or fettuccine
- 1 cup ripe tomatoes, diced
- 1 cup heavy cream
- 4 cloves fresh garlic, minced
- 2 tablespoons extra virgin olive oil
- ¼ cup fresh basil, chopped
- Salt and black pepper to taste
Instructions
- Bring a large pot of salted water to a boil. Add the pasta and cook until al dente, reserving about one cup of pasta water before draining. Set aside.
- Heat olive oil in a large skillet over medium heat. Add minced garlic and sauté gently until golden and fragrant.
- Add diced tomatoes to the skillet along with salt and pepper. Simmer for about five minutes until softened. Lower heat and stir in heavy cream, allowing the sauce to thicken gently.
- Add the cooked pasta to the sauce and toss until every strand is coated. If the sauce is too thick, add reserved pasta water to reach desired consistency.
Notes
Use fresh garlic and tomatoes for best flavor. Balance richness with a squeeze of lemon juice if needed.
