- 4 boneless, skinless chicken breasts
- Salt & pepper to taste
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 tablespoon Dijon mustard
- 2 cups crushed pretzels (about 6 ounces)
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 2 tablespoons olive oil or melted butter
- 2 tablespoons butter (for sauce)
- 2 tablespoons all-purpose flour (for sauce)
- 1 cup milk (whole or 2%)
- 1 tablespoon Dijon mustard (for sauce)
- 1/2 tablespoon yellow mustard (for sauce)
- 1 cup sharp cheddar cheese, shredded (for sauce)
- Salt and pepper to taste (for sauce)
- Fresh parsley, chopped, for garnish
- Extra crushed pretzels for texture
Instructions
- Flatten the chicken breasts and season with salt and pepper.
- Set up dredging station with flour, egg mixture (eggs and Dijon), and crushed pretzels mixed with garlic and smoked paprika.
- Dredge each chicken breast in flour, dip into the egg mixture, then coat with pretzels.
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Place coated chicken on the baking sheet, brush with olive oil or melted butter, and bake for 20–25 minutes, flipping halfway.
- While chicken is baking, melt butter in a saucepan, add flour to create a roux, then whisk in milk until thickened.
- Add Dijon and yellow mustard to the sauce, then stir in cheddar cheese until melted. Season with salt and pepper.
- Once chicken is cooked through (internal temperature 165°F), serve topped with cheddar mustard sauce, garnished with parsley and extra crushed pretzels.
Notes
Consider double-dipping the chicken for extra crunch. Leftovers can be stored in the fridge for up to three days or frozen for three months.
