Ingredients

  • 1 onion, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can corn, drained
  • 1 can diced tomatoes
  • 1 can kidney beans, drained
  • 4 cups beef broth
  • 1 cup heavy cream
  • 2 teaspoons garlic powder
  • 1 tablespoon chili powder
  • Salt and pepper to taste

Instructions

  1. Brown the beef by heating a skillet over medium heat. Add the ground beef and chopped onion, cooking until browned and translucent. Drain any excess fat.
  2. Transfer the beef and onion mixture to your crockpot. Add the diced carrots, celery, drained corn, diced tomatoes, and kidney beans. Pour in beef broth, sprinkle garlic powder, chili powder, salt, and pepper, then stir everything together.
  3. Set your crockpot to LOW for 6-8 hours or HIGH for 3-4 hours. In the last 30 minutes, stir in the heavy cream.
