Description

A comforting Taco Casserole made in the crockpot, filled with seasoned beef, crispy tortilla chips, and melted cheese that brings family together.


Ingredients

  • 1 pound ground beef
  • 1 can black beans (15 oz), drained and rinsed
  • 1 can corn (15 oz), drained
  • 1 packet taco seasoning
  • 2 cups tortilla chips
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1 cup salsa
  • 1 cup diced tomatoes
  • 1 onion, chopped
  • Optional: sour cream, jalapeños, cilantro for topping

Instructions

  1. In a skillet over medium heat, brown the ground beef and sauté the chopped onion until translucent, about 5-7 minutes.
  2. In a crockpot, layer half of the tortilla chips, followed by half of the beef mixture, black beans, corn, salsa, diced tomatoes, and cheese. Repeat with remaining ingredients.
  3. Cover and cook on low for 4-6 hours or on high for 2-3 hours until heated through and cheese is melted.

Notes

For a healthier option, substitute ground beef with ground turkey or crumbled tofu. Customize with toppings like sour cream and jalapeños.
