A comforting Taco Casserole made in the crockpot, filled with seasoned beef, crispy tortilla chips, and melted cheese that brings family together.
Ingredients

- 1 pound ground beef
- 1 can black beans (15 oz), drained and rinsed
- 1 can corn (15 oz), drained
- 1 packet taco seasoning
- 2 cups tortilla chips
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1 cup salsa
- 1 cup diced tomatoes
- 1 onion, chopped
- Optional: sour cream, jalapeños, cilantro for topping
Instructions
- In a skillet over medium heat, brown the ground beef and sauté the chopped onion until translucent, about 5-7 minutes.
- In a crockpot, layer half of the tortilla chips, followed by half of the beef mixture, black beans, corn, salsa, diced tomatoes, and cheese. Repeat with remaining ingredients.
- Cover and cook on low for 4-6 hours or on high for 2-3 hours until heated through and cheese is melted.
Notes
For a healthier option, substitute ground beef with ground turkey or crumbled tofu. Customize with toppings like sour cream and jalapeños.
