Description

A cozy and flavorful crockpot dish bringing together pasta, seasoned ground beef, and vibrant tomatoes.

Ingredients

Scale
  • 1 pound ground beef
  • 2 cups pasta (elbow macaroni or rotini)
  • 1 packet taco seasoning
  • 1 can diced tomatoes (14.5 oz)
  • 1 cup beef broth (or vegetable broth for a lighter option)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 cup black beans (optional)
  • Salt and pepper to taste
  • Chopped cilantro for garnish (optional)

Instructions

  1. Brown the ground beef in a skillet over medium heat, then drain excess fat.
  2. Combine the browned beef and taco seasoning in a crockpot, adding diced tomatoes and beef broth.
  3. Fold in the pasta, cover, and cook on low for 5-6 hours.
  4. Stir in the shredded cheese until melted; season with salt and pepper, and serve garnished with cilantro.

Notes

For extra creaminess, stir in half a cup of cream cheese before adding shredded cheese. Feel free to swap ground beef for chicken, turkey, or a vegetarian option.
