Description

A rich and fluffy no-bake cheesecake infused with cold brew coffee, featuring a crumbly crust and a creamy filling for a perfect dessert experience.


Ingredients

  • 1.5 cups graham cracker crumbs or crushed biscotti
  • 6 tablespoons unsalted butter, melted
  • 16 oz cream cheese, softened
  • 0.75 cup powdered sugar
  • 1 cup cold brew coffee, strongly brewed
  • 1 teaspoon vanilla extract
  • 1.5 cups heavy whipping cream, cold
  • 12 pieces ladyfingers, cut in half
  • 2 tablespoons unsweetened cocoa powder for dusting

Instructions

  1. Combine graham cracker crumbs (or crushed biscotti) with melted butter in a bowl, press into the bottom of a 9-inch springform pan, and refrigerate for 10 minutes.
  2. Beat softened cream cheese and powdered sugar until smooth. Add ½ cup cold brew coffee and vanilla extract, mix until well combined.
  3. Whip heavy cream until stiff peaks form and fold into cream cheese mixture gently.
  4. Dip ladyfingers briefly into remaining cold brew coffee and layer them over the crust.
  5. Pour cheesecake mixture over ladyfinger layer, smooth the top, cover with plastic wrap and chill for at least 4 hours.
  6. Dust with cocoa powder before serving and slice to enjoy.

Notes

For a lighter version, you can replace some cream cheese with Greek yogurt. Use crushed biscotti for extra crunch if desired.
