- 1.5 cups graham cracker crumbs or crushed biscotti
- 6 tablespoons unsalted butter, melted
- 16 oz cream cheese, softened
- 0.75 cup powdered sugar
- 1 cup cold brew coffee, strongly brewed
- 1 teaspoon vanilla extract
- 1.5 cups heavy whipping cream, cold
- 12 pieces ladyfingers, cut in half
- 2 tablespoons unsweetened cocoa powder for dusting
Instructions
- Combine graham cracker crumbs (or crushed biscotti) with melted butter in a bowl, press into the bottom of a 9-inch springform pan, and refrigerate for 10 minutes.
- Beat softened cream cheese and powdered sugar until smooth. Add ½ cup cold brew coffee and vanilla extract, mix until well combined.
- Whip heavy cream until stiff peaks form and fold into cream cheese mixture gently.
- Dip ladyfingers briefly into remaining cold brew coffee and layer them over the crust.
- Pour cheesecake mixture over ladyfinger layer, smooth the top, cover with plastic wrap and chill for at least 4 hours.
- Dust with cocoa powder before serving and slice to enjoy.
Notes
For a lighter version, you can replace some cream cheese with Greek yogurt. Use crushed biscotti for extra crunch if desired.
