Description

A classic Irish dish combining tender potatoes, savory sausages, and earthy herbs for a hearty comfort meal.

Ingredients

Scale
  • 8 slices beef bacon, chopped
  • 1 pound high-quality beef or chicken sausages
  • 3 tablespoons all-purpose flour
  • 1 bottle non-alcoholic malt or broth
  • 2 pounds potatoes, peeled and cut into bite-sized pieces
  • 2 large onions, sliced
  • 4 cloves garlic, minced
  • 4 tablespoons fresh parsley, minced
  • 3 bay leaves
  • 1 teaspoon dried thyme
  • Fresh cracked black pepper to taste
  • 2 cups beef or chicken broth

Instructions

  1. Preheat oven to 300°F. In a large Dutch oven, cook the chopped bacon over high heat until crisp. Remove and drain on paper towels.
  2. Add sausages to the pot, cooking them until browned on all sides, then slice into 1-inch pieces.
  3. Reduce heat, whisk in flour, and cook for 2 minutes. Then add the non-alcoholic malt or broth to create a roux.
  4. Layer half the potatoes, onions, garlic, bacon, sausage, parsley, bay leaves, thyme, and pepper in the pot. Repeat with the remaining ingredients.
  5. Pour beef or chicken broth over the layers and cover. Bake for at least 2 hours.
