- 1 lb Ground Beef
- 1 Onion, diced
- 2 cloves Garlic, minced
- 4 Potatoes, diced (Yukon Gold or Russet recommended)
- 4 cups Chicken Broth
- 1 cup Cheddar Cheese, shredded
- 1 cup Milk (or non-dairy alternative)
- 1/2 cup Heavy Cream (or coconut milk)
- 2 tbsp Olive Oil
- Salt, to taste
- Pepper, to taste
Instructions
- Heat olive oil in a large pot over medium heat. Add diced onion and minced garlic, cooking until softened (3-4 minutes).
- Add ground beef, breaking it up as it cooks until browned (5-7 minutes). Drain excess grease.
- Stir in diced potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender (15-20 minutes).
- Pour in milk and heavy cream, stirring gently without boiling.
- Gradually add shredded cheddar cheese, stirring until melted and creamy.
- Season with salt and pepper. Simmer for an additional 5-10 minutes.
- Ladle into bowls and optionally garnish with extra cheese or green onions.
Notes
This soup can be made ahead of time and reheats well. Adjust thickness by adding broth or milk as needed.
