- 1½ pounds lean ground beef (93% lean)
- ½ cup plain breadcrumbs (Panko or gluten-free crumbs)
- ¼ cup milk (whole or 2% — dairy-free milk works too)
- 1 large egg (lightly beaten)
- 1 small yellow onion (finely chopped)
- 2 cloves garlic (minced)
- ¼ cup ketchup (plus extra for glazing)
- 1 tablespoon Worcestershire sauce
- 1 teaspoon dried oregano
- 1 teaspoon kosher salt
- ½ teaspoon black pepper (freshly ground)
- ¼ teaspoon smoked paprika (optional)
- 2 tablespoons brown sugar (for the glaze)
Instructions
- Preheat your oven to 350°F (175°C) and line a 9×5-inch loaf pan with parchment paper.
- Combine the lean ground beef, breadcrumbs, and the lightly beaten egg in a large mixing bowl.
- Add chopped onion, minced garlic, ketchup, Worcestershire sauce, oregano, salt, pepper, and smoked paprika (if using). Stir until just combined.
- Shape the mixture into a loaf in the pan, topping with a drizzle of ketchup mixed with brown sugar.
- Bake for about 45 to 55 minutes, until the internal temperature reaches 160°F (70°C). Let it rest before slicing.
Notes
Don’t over-mix the meat mixture for the best texture. Check for doneness with a meat thermometer.
