Ingredients

- 2 cups cooked rice
- 1 lb chicken breast, diced
- 1 cup pineapple chunks (fresh or canned)
- 1 bell pepper, chopped
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon olive oil
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Heat olive oil in a large pan over medium heat. Add minced garlic, chopped onion, and diced bell pepper; sauté for 3-5 minutes until softened.
- Add diced chicken and season with salt and pepper. Cook for 5-7 minutes until browned and cooked through.
- Stir in pineapple chunks and soy sauce, then add cooked rice. Mix well and cook for an additional 2-3 minutes until heated through. Serve hot, garnished with green onions.
Notes
Feel free to substitute chicken with thighs or turkey for different textures. Fresh pineapple is recommended but canned works well too.
