Description

A quick and cozy dinner featuring tender cubes of beef coated in rich garlic butter, served with tender-crisp zucchini.


Ingredients

  • 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
  • 1 medium zucchini, cut into half-moons
  • 3 tablespoons butter
  • 3 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Optional: Fresh parsley, chopped, for garnish

Instructions

  1. Pat the steak bites dry with paper towels and season with salt and pepper. Heat a skillet over medium-high heat and add olive oil. Sear the steak bites in a single layer for about 1-2 minutes on each side until golden-brown, then remove from the skillet.
  2. Add butter to the same skillet and melt. Once melted, add minced garlic and cook for about 30 seconds until fragrant.
  3. Stir in the zucchini and cook for 3-5 minutes until tender-crisp. Return the steak bites to the skillet and toss everything together, cooking for an additional 1-2 minutes. Garnish with fresh parsley if desired.

Notes

Don’t overcrowd the pan when searing the steak for best results. Use a meat thermometer for perfectly cooked steak. Consider adding fresh herbs as a garnish for added flavor.
