Description
A quick and cozy dinner featuring tender cubes of beef coated in rich garlic butter, served with tender-crisp zucchini.
Ingredients
Scale
- 1 lb steak (sirloin, ribeye, or New York strip), cut into 1-inch cubes
- 1 medium zucchini, cut into half-moons
- 3 tablespoons butter
- 3 cloves garlic, minced
- 1 tablespoon olive oil
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Optional: Fresh parsley, chopped, for garnish
Instructions
- Pat the steak bites dry with paper towels and season with salt and pepper. Heat a skillet over medium-high heat and add olive oil. Sear the steak bites in a single layer for about 1-2 minutes on each side until golden-brown, then remove from the skillet.
- Add butter to the same skillet and melt. Once melted, add minced garlic and cook for about 30 seconds until fragrant.
- Stir in the zucchini and cook for 3-5 minutes until tender-crisp. Return the steak bites to the skillet and toss everything together, cooking for an additional 1-2 minutes. Garnish with fresh parsley if desired.
Notes
Don’t overcrowd the pan when searing the steak for best results. Use a meat thermometer for perfectly cooked steak. Consider adding fresh herbs as a garnish for added flavor.
