Ingredients

  • 1 lb ground chicken
  • 4 cloves fresh garlic, minced
  • 1 cup grated Parmesan cheese
  • 1 cup breadcrumbs (plain or Italian-seasoned)
  • 2 large eggs
  • 1 medium onion, diced
  • 2 tbsp soy sauce (low-sodium recommended)
  • 1 tsp salt
  • 1 tsp black pepper

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté diced onions in a skillet over medium heat with olive oil for about 5 minutes until soft.
  3. In a large bowl, combine ground chicken, sautéed onions, minced garlic, breadcrumbs, eggs, soy sauce, salt, pepper, and half of the Parmesan cheese. Mix until well combined without overmixing.
  4. Transfer the mixture to a greased baking dish and shape it into a loaf. Sprinkle remaining Parmesan cheese on top.
  5. Bake for 45-50 minutes, or until the internal temperature reaches 165°F (74°C). Let rest for 10 minutes before slicing.
