Delicious cookie bars that capture the flavors of classic s’mores without the need for a campfire.
Ingredients

- 1 cup Unsalted butter, softened
- 1 cup Brown sugar, packed
- 1/2 cup Granulated sugar
- 2 Large eggs
- 1 teaspoon Vanilla extract
- 2 1/2 cups All-purpose flour
- 1 teaspoon Baking soda
- 1/2 teaspoon Salt
- 1 cup Graham cracker crumbs
- 1 cup Chocolate chips
- 1 cup Mini marshmallows
- Extra chocolate chips and marshmallows for topping, to taste
Instructions
- Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish or line it with parchment paper.
- Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
- Add the eggs one at a time and the vanilla extract, beating well after each addition.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the graham cracker crumbs, chocolate chips, and mini marshmallows.
- Spread the batter into the prepared baking dish and sprinkle extra chocolate chips and mini marshmallows on top.
- Bake for 25-30 minutes, until golden brown and the center is set.
- Cool in the pan, then slice into squares.
Notes
Let the cookie bars cool completely in the pan for easier slicing.
