Description

Delicious cookie bars that capture the flavors of classic s’mores without the need for a campfire.


Ingredients

  • 1 cup Unsalted butter, softened
  • 1 cup Brown sugar, packed
  • 1/2 cup Granulated sugar
  • 2 Large eggs
  • 1 teaspoon Vanilla extract
  • 2 1/2 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1/2 teaspoon Salt
  • 1 cup Graham cracker crumbs
  • 1 cup Chocolate chips
  • 1 cup Mini marshmallows
  • Extra chocolate chips and marshmallows for topping, to taste

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking dish or line it with parchment paper.
  2. Cream together the softened butter, brown sugar, and granulated sugar until light and fluffy.
  3. Add the eggs one at a time and the vanilla extract, beating well after each addition.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  6. Fold in the graham cracker crumbs, chocolate chips, and mini marshmallows.
  7. Spread the batter into the prepared baking dish and sprinkle extra chocolate chips and mini marshmallows on top.
  8. Bake for 25-30 minutes, until golden brown and the center is set.
  9. Cool in the pan, then slice into squares.

Notes

Let the cookie bars cool completely in the pan for easier slicing.
