  • 1 packet Taco Seasoning
  • 2 cups Cooked White Rice (or brown rice/quinoa)
  • 1 cup Sour Cream (or yogurt/dairy-free alternatives)
  • 1 cup Nacho Cheese Sauce (or vegan cheese)
  • 1 cup Shredded Cheddar Cheese (or other cheese blend)
  • 1 cup Shredded Mozzarella Cheese (optional)
  • 1 tablespoon Chipotle Sauce
  • 4 large Flour Tortillas (or whole wheat/gluten-free)
  • 2 tablespoons Butter or Oil (or olive oil/non-stick spray)

Instructions

  1. In a large skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat and add taco seasoning, mixing in water as needed. Stir in cooked rice until heated through.
  2. Lay out a tortilla, spread sour cream, add the beef and rice mixture, sprinkle cheddar and mozzarella cheese, and drizzle with chipotle sauce. Fold sides and roll tightly.
  3. Heat butter or oil in a skillet. Place the burrito seam-side down and cook for 2-3 minutes on each side until crispy and golden. Let sit before slicing in half.
