- 1 pound ground turkey
- 2 large sweet potatoes, peeled and diced
- 1 bell pepper, diced
- 1 onion, diced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon cumin
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 400°F (200°C). In a large bowl, combine diced sweet potatoes, bell pepper, onion, and minced garlic. Drizzle with olive oil and season with paprika, cumin, salt, and pepper. Toss until veggies are coated.
- Spread the vegetable mixture on a baking sheet and bake for about 20 minutes, until sweet potatoes soften.
- In a skillet over medium heat, add a splash of olive oil if desired and cook the ground turkey until browned, 5 to 7 minutes, breaking it up as it cooks.
- Stir the cooked turkey into the roasted veggies. Optional: Add a splash of chicken broth. Mix gently and return to the oven for another 10 to 15 minutes.
- Garnish with fresh parsley if desired and serve.

For variations, consider adding greens, using different proteins or cheeses, and adjusting spices to your liking.
