Ingredients

  • 1 pound ground turkey
  • 2 large sweet potatoes, peeled and diced
  • 1 bell pepper, diced
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat your oven to 400°F (200°C). In a large bowl, combine diced sweet potatoes, bell pepper, onion, and minced garlic. Drizzle with olive oil and season with paprika, cumin, salt, and pepper. Toss until veggies are coated.
  2. Spread the vegetable mixture on a baking sheet and bake for about 20 minutes, until sweet potatoes soften.
  3. In a skillet over medium heat, add a splash of olive oil if desired and cook the ground turkey until browned, 5 to 7 minutes, breaking it up as it cooks.
  4. Stir the cooked turkey into the roasted veggies. Optional: Add a splash of chicken broth. Mix gently and return to the oven for another 10 to 15 minutes.
  5. Garnish with fresh parsley if desired and serve.
