- 2 cups rolled oats
- 1 cup unsweetened applesauce
- 2 cups grated apples (about 2–3 apples)
- 1/2 cup honey or maple syrup
- 1/2 cup Greek yogurt or unsweetened almond milk
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon salt
- 1 teaspoon vanilla extract
- 1/4 cup chopped nuts (optional)
Instructions
- Preheat your oven to 350°F (175°C) and prepare a cake pan.
- In a large bowl, mix together rolled oats, grated apples, applesauce, and honey (or maple syrup), then stir in yogurt or almond milk.
- Add baking powder, cinnamon, salt, and vanilla; mix until combined. Fold in chopped nuts if desired.
- Pour the mixture into the prepared pan and bake for 25-30 minutes, or until a toothpick comes out clean.
- Allow to cool slightly before transferring the cake to a wire rack to cool completely.
Notes
Using fresh, high-quality apples will significantly elevate the flavor. Store the cake in an airtight container for 3-4 days or freeze for longer storage.
