  • 1/2 cup honey or maple syrup
  • 1/2 cup Greek yogurt or unsweetened almond milk
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/4 cup chopped nuts (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a cake pan.
  2. In a large bowl, mix together rolled oats, grated apples, applesauce, and honey (or maple syrup), then stir in yogurt or almond milk.
  3. Add baking powder, cinnamon, salt, and vanilla; mix until combined. Fold in chopped nuts if desired.
  4. Pour the mixture into the prepared pan and bake for 25-30 minutes, or until a toothpick comes out clean.
  5. Allow to cool slightly before transferring the cake to a wire rack to cool completely.
