Ingredients

  • 2 cups cooked chicken, shredded
  • 1 cup salsa verde
  • 1 cup black beans, drained and rinsed
  • 1 cup corn (frozen or canned)
  • 1 cup cooked rice (white or brown)
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • 1 teaspoon cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large mixing bowl, combine the shredded chicken, salsa verde, black beans, corn, cooked rice, cumin, chili powder, and a sprinkle of salt and pepper. Mix thoroughly.
  3. Pour the mixture into a greased 9×13 inch baking dish and sprinkle shredded cheese over the top.
  4. Bake for about 25-30 minutes, until the cheese is melted and bubbly. Let cool for a few minutes before serving.
  5. Garnish with fresh cilantro if desired and serve.

Notes

Allow the casserole to cool slightly for better portions. For a vegetarian option, replace chicken with more beans or roasted vegetables.
