- 2 cups cooked chicken, shredded
- 1 cup salsa verde
- 1 cup black beans, drained and rinsed
- 1 cup corn (frozen or canned)
- 1 cup cooked rice (white or brown)
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1 teaspoon cumin
- 1 teaspoon chili powder
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Instructions
- Preheat the oven to 350°F (175°C).
- In a large mixing bowl, combine the shredded chicken, salsa verde, black beans, corn, cooked rice, cumin, chili powder, and a sprinkle of salt and pepper. Mix thoroughly.
- Pour the mixture into a greased 9×13 inch baking dish and sprinkle shredded cheese over the top.
- Bake for about 25-30 minutes, until the cheese is melted and bubbly. Let cool for a few minutes before serving.
- Garnish with fresh cilantro if desired and serve.
Notes
Allow the casserole to cool slightly for better portions. For a vegetarian option, replace chicken with more beans or roasted vegetables.
