Ingredients

- 2 cups rolled oats
- 2 cups fresh strawberries, chopped
- 1/2 cup unsweetened applesauce
- 1/4 cup maple syrup or agave syrup
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
Instructions
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a large mixing bowl, combine the rolled oats, baking powder, and salt.
- In a separate bowl, mix together the applesauce, maple syrup (or agave syrup), and vanilla extract until combined.
- Pour the wet ingredients into the bowl of dry ingredients and gently stir until just combined. Fold in chopped strawberries.
- Transfer the mixture into the lined baking pan, pressing it down evenly.
- Bake for 25-30 minutes, or until the edges are golden brown.
- Allow the bars to cool in the pan before lifting them out and cutting into squares.
Notes
You can add nuts, seeds, or chocolate chips for extra flavor. Store in an airtight container for up to a week at room temperature.
