Ingredients
450g ground turkey (93% lean)
150g tempeh
200g quinoa
1 poblano pepper
1 tbsp turmeric
1 tbsp cumin
1 lime
1 tbsp tamarind paste
30g pepitas
2 tbsp olive oil
Salt to taste
Instructions
Heat oil in a skillet over high heat
Brown ground turkey for 4 minutes
Add turmeric, cumin, and charred poblano pepper; cook 2 minutes
Soak cubed tempeh in lime juice and tamarind paste for 5 minutes
Sauté tempeh until golden
Cook quinoa according to package instructions
Assemble: Layer turkey-pepper mixture on quinoa, top with tempeh and pepitas
