Homemade chocolate croissants filled with rich chocolate, perfect for a cozy morning treat.
Ingredients

- 4 cups (500g) all-purpose flour
- 1/4 cup (50g) granulated sugar
- 1 tsp salt
- 2 1/4 tsp (1 packet) instant yeast
- 1 1/4 cups (300ml) cold whole milk
- 1 cup (226g) unsalted butter, softened
- 2 tbsp all-purpose flour
- 16 chocolate batons or 8 oz high-quality semi-sweet chocolate, cut into bars
- 1 large egg
- 1 tbsp milk
- Confectioners’ sugar for dusting (optional)
Instructions
- Make the dough by combining flour, sugar, salt, and yeast in a stand mixer bowl. Add cold milk gradually and knead for about 5 minutes, then refrigerate for 30 minutes.
- Prepare the butter layer by beating softened butter and flour until smooth, then shape it and refrigerate for 30 minutes.
- Laminate the dough by rolling it out, encasing the butter in the dough, and folding it in thirds. Repeat this folding two more times, then refrigerate for at least 4 hours or overnight.
- Shape croissants by rolling out the dough and cutting it into rectangles, placing a chocolate baton at one end, and rolling tightly. Proof at room temperature and then refrigerate.
- Bake croissants at 400°F (204°C) for about 20 minutes until golden brown, then let cool and dust with confectioners’ sugar if desired.
Notes
For variations, try adding nuts, fruit, or spices to the filling. Can be made ahead of time and stored or frozen for later enjoyment.
