- 2 cups elbow macaroni
- 4 cups beef broth (or chicken broth for lighter flavor)
- 1 cup shredded cheddar cheese (plus more for topping)
- 1 cup milk (or a non-dairy alternative)
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon onion powder
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1 tablespoon olive oil or vegetable oil
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for 2-3 minutes until translucent. Stir in the minced garlic and cook for an additional minute.
- Add the ground beef to the skillet, breaking it up with a spatula, and cook until browned, about 5-7 minutes. Season with paprika, onion powder, garlic powder, salt, and pepper.
- Stir in the elbow macaroni, beef broth, and milk. Bring to a boil, then reduce heat to low and cover. Simmer for 10-12 minutes until pasta is al dente, stirring occasionally.
- Once cooked, add the shredded cheese and fold in gently until melted and creamy. Simmer for a few more minutes to combine everything well.
