Ingredients

  • 1 lb (450g) ground beef (or ground turkey for a lighter option)
  • 2 cups elbow macaroni
  • 4 cups beef broth (or chicken broth for lighter flavor)
  • 1 cup shredded cheddar cheese (plus more for topping)
  • 1 cup milk (or a non-dairy alternative)
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 1 tablespoon olive oil or vegetable oil

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Add the diced onion and sauté for 2-3 minutes until translucent. Stir in the minced garlic and cook for an additional minute.
  2. Add the ground beef to the skillet, breaking it up with a spatula, and cook until browned, about 5-7 minutes. Season with paprika, onion powder, garlic powder, salt, and pepper.
  3. Stir in the elbow macaroni, beef broth, and milk. Bring to a boil, then reduce heat to low and cover. Simmer for 10-12 minutes until pasta is al dente, stirring occasionally.
  4. Once cooked, add the shredded cheese and fold in gently until melted and creamy. Simmer for a few more minutes to combine everything well.
