A comforting one-pan meal featuring tender chicken coated in honey BBQ sauce served over fluffy rice with colorful vegetables.
Ingredients
- Boneless, skinless chicken thighs – 1 lb
- Long-grain rice – 1 cup
- Chicken broth – 2 cups
- BBQ sauce – ½ cup
- Honey – ¼ cup
- Garlic powder – 1 teaspoon
- Onion powder – 1 teaspoon
- Smoked paprika – ½ teaspoon
- Salt and black pepper – to taste
- Mixed vegetables – 1 cup, optional
- Green onions, chopped – for garnish
Instructions
- Season the chicken with garlic powder, onion powder, smoked paprika, salt, and pepper. Heat a skillet over medium heat with oil and sear the chicken for 3 to 4 minutes per side until golden. Remove from the pan and set aside.
- In a small bowl, stir together the BBQ sauce and honey until smooth and well combined.
- Add the uncooked rice to the skillet and toast for 1 to 2 minutes, stirring frequently. Pour in the chicken broth and half of the honey BBQ sauce, stirring gently. Return the chicken to the pan and spoon the remaining sauce over the top. Cover and simmer on low heat for about 15 minutes.
- Add the mixed vegetables, cover again, and cook for an additional 5 minutes until the rice is tender and the chicken is fully cooked. Remove from heat and let rest briefly before serving.
