- ½ cup unsalted butter, melted
- 1 cup heavy cream
- 1 cup brewed Irish coffee, cooled (or strong brewed coffee)
- 8 oz cream cheese, softened
- ½ cup powdered sugar
- 1 teaspoon vanilla extract
- Cocoa powder, for topping
Instructions
- Preheat your oven to 350°F (175°C). In a mixing bowl, combine the graham cracker crumbs with the melted butter until well mixed. Press this mixture into the bottom and sides of a pie pan to form a crust. Bake for 8-10 minutes until golden brown and let cool.
- In a separate bowl, whip the heavy cream until soft peaks form. Set aside.
- In another bowl, beat together the cream cheese, powdered sugar, brewed coffee, and vanilla extract until smooth. Gently fold in the whipped cream.
- Pour the filling into the cooled crust and spread evenly. Refrigerate for at least 4 hours or overnight.
- Before serving, dust with cocoa powder and add whipped cream if desired.
