A cozy dish of creamy mashed potatoes blended with tender cabbage and topped with crumbled bacon, perfect for family gatherings.


Ingredients

  • 2 ½ pounds red-skinned potatoes, scrubbed and quartered
  • 3 teaspoons salt, divided, plus more to taste
  • 6 tablespoons butter, divided
  • 2 teaspoons minced garlic
  • ½ head green cabbage, roughly chopped (about 56 cups)
  • ½ teaspoon fresh ground black pepper, plus more to taste
  • ½ to ¾ cup slightly warmed milk, as needed
  • 1 teaspoon onion powder
  • 4 slices turkey bacon, cooked and crumbled (or beef bacon)
  • 2 green onions, thinly sliced

Instructions

  1. Start by placing the quartered potatoes in a large pot or Dutch oven. Cover them with cold water and add 2 teaspoons of salt. Bring to a boil, then simmer for about 15–20 minutes until tender. Drain and set aside.
  2. Melt 2 tablespoons of butter in the same pot over medium heat. Add the minced garlic and sauté until fragrant, then add the chopped cabbage. Cook until softened, around 5 minutes. Season with salt and pepper.
  3. Return the potatoes to the pot with the cabbage. Add half of the warmed milk, the remaining butter, onion powder, and salt. Mash the potatoes to a chunky consistency, adding more milk as needed. Top with crumbled bacon and garnish with green onions. Serve warm.
