- 2 cups mashed potatoes
- 1 cup all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup chopped green onions (optional)
- 1/4 cup shredded cheese (optional)
- 1/4 cup butter (for frying)
Instructions
- In a large bowl, combine the mashed potatoes, all-purpose flour, baking powder, salt, and black pepper. Mix until a soft dough forms. If using, fold in green onions or cheese.
- Turn the dough out onto a floured surface. Divide into eight equal portions and shape into patties.
- Heat a skillet over medium heat and add butter. Fry the cakes in batches for 4-5 minutes on each side until golden brown. Transfer to a paper towel-lined plate.
Notes
Don’t overmix the dough to keep the texture light and fluffy. Fry in batches to avoid steaming.
