A delightful twist on traditional fare, these Irish Tacos blend fluffy mashed potatoes, tender corned beef, crunchy cabbage, and creamy dressing wrapped in cozy tortillas.

- 12 tortillas (flour or corn, taco-sized)
- 3 russet potatoes
- 1 cup cheddar cheese (Irish, shredded)
- 1 pinch salt
- 1 pinch black pepper
- 1 pound deli corned beef (thinly sliced) or substitute
- 1 cup cabbage (chopped)
- ½ cup Thousand Island dressing
- ½ onion (sweet, sliced)
- Oil (for frying)
- Chives (freshly chopped, for garnish)
Instructions
- Wash and peel the russet potatoes, then cut them into cubes. Place them in salted boiling water and cook for about 10 minutes until tender.
- Drain the potatoes and set aside. In the same pot, add chopped cabbage and sliced onion, cooking for another 5 minutes to soften.
- In a mixing bowl, combine the cooked potatoes with salt, pepper, and cheddar cheese, mixing until melted.
- Heat a skillet over medium heat. Spread Thousand Island dressing on one half of the tortillas, followed by a layer of the mashed potato mixture and slices of corned beef, cabbage, and onion. Fold to create taco shape.
- Pour in vegetable oil into the skillet. Fry each taco for about 30 seconds on each side until golden brown and crispy. Garnish with freshly chopped chives.
Notes
Tacos can be made ahead and stored in the refrigerator. Use fresh ingredients for the best flavor.
